Hairy Tony’s has only been on the scene for a year and a half (as of March 2007), but already this funky little place is making a big splash. Owner Tony Caruso wasn’t exactly sure what he wanted to do with the space, but he knew that the last thing he wanted was yet another collegetown bar. With friend and business partner George Seibel, Tony started painting, repairing floors, and searching out lighting fixtures. The result of all their work is an upbeat, interesting atmosphere – a place that’s exciting to be in without being overwhelming.

It hasn’t been easy – George and Tony have owned and operated A Pizza and More for more than 2 decades, but learning the bar business was definitely a new experience. Tony says that one of the things that has been most helpful is a willingness to be flexible and to try out ideas with an open mind about the outcome. Hairy Tony’s is constantly evolving as Tony figures out what works and what might work better.

Tony is committed to finding what works best and to contributing to the variety of restaurants that Downtown Cortland has to offer. He refuses to settle for "good enough," and even the restaurant’s chairs are a testimony to this drive. They are the "most comfortable chairs in town" – so comfortable, Tony says, that he sometimes has to convince customers to make room for new arrivals!

Just as the restaurant’s décor and atmosphere have "George and Tony" written all over them, the menu also reflects Tony’s abiding interest in variety and quality. The menu changes seasonally and represents diverse cuisines with items like Shepherd’s Pie and Fried Calamari. The food is "as good as any and better than most," Tony says. All of the alcohol at Hairy Tony’s can be purchased in "lights" – 4 half-shots or small glasses of wine or beer – giving customers the opportunity to sample something new and different without buying individual drinks. Good service is another commitment of Tony’s. He worked hard to train his staff, and his hope is that the service is part of the reason that people choose to come back to Hairy Tony’s.
